About this deal

This is the first of our collaborations through our partnership with Heriot-Watt University’s Brewing and Distilling MSc course. A mixture of maceration and vapour infusion techniques are utilised to create the delightful flavour profile of Edinburgh Gin. Making use of some intriguing Scottish ingredients from the coast, like seaweed, ground ivy, gorse flowers and scurvy grass (which sailors used to eat when suffering from scurvy for its precious Vitamin C), they've created a superb summer tipple capturing the essence of the seaside. In sitting down with this one, I realize I don't always have a "clean" philosophy as to how I feel about subtlety. The Edinburgh Seaside is a capable gin, but one that fits a little more neatly into the Broker's camp than it does the Gin Mare camp. Scotland produces around 70% of the UK’s gin and there’s now an array of premium craft gins from all over the country. Edinburgh Gin is a nod to the days when the city of Edinburgh was a hub of Northern distilling expertise.As well as the signature botanicals mentioned earlier (bladderwrack seaweed, scurvy grass and ground ivy), there are also the more traditional gin botanicals of juniper, coriander seeds, angelica root, orris root, cardamom and grains of paradise. In the pursuit of this goal, Edinburgh Gin has incorporated botanicals I certainly wouldn't be able to pick out of a police lineup.

From the product copy and name, it's clear the producers set out to make spirit that's self-consciously mineral and maritime. It uses foraged shoreline botanicals including ground ivy, bladderwrack and scurvygrass, along with the more traditional London dry botanicals. In June 2014 they established their two gin stills and visitor experience and bar in central Edinburgh, working in partnership with Heriot Way Dept of Brewing and Distilling to establish a centre of gin excellence and innovation in Edinburgh.The result of what could be multiple collaborations with the Heriot-Watt University, every Edinburgh Seaside Gin mini bottle is flavour infused with marine plants found along the coastline, which includes bladderwrack, ground ivy, and scurvy grass. It’s during this period that our love of gin began, with a ready supply of spices imported via the dock. Inspired by its city’s gin-making heritage, Edinburgh Gin has been a huge player in the Scottish capital’s own gin renaissance. There's sea salt and seaweed here, but the dominant taste is considerably more vague most of the time, with lemon and pepper wisps being more memorable than the cocktail of ocean detritus that presumably goes into the gin stills at Edinburgh.Together with David Wilkinson, four students from the programme were selected to work on the project.

You smell it in the glass and it's definitely there in the finish, but the meat of the tasting experience is, well, the seaside.Scurvygrass possesses a flavour that is akin to that of horseradish and watercress, both close relatives of this herb. Originally a limited edition product that was recently made part of the distillery's core range, Edinburgh Seaside Gin is made with traditional gin botanicals, including grains of paradise, coriander, and cardamom, along with foraged Scottish botanicals, such as scurvy grass, ground ivy and bladderwrack.
